A dry Irish Stout is one of the classic brewing styles. Visually it is outstanding, with its contrasting dark body and white head, and its lower alcohol-content means that it is a very “sessionable” beer indeed.
This All Grain Dry Irish Stout recipe is deliberately still quite simple. I think there’s no sense in going crazy adding different grains and six types of hops, without knowing the effect each addition has on the finished brew.
I confess to having ramped-up the grain bill a fair bit. I do prefer a stronger beer when given the choice.
You could scale down the ingredients further – You could omit the chocolate malt and the dark crystal, and get a brew that will be tasty, but a bit closer to the normal gravity of an Irish Stout.
When you’re starting out brewing All Grain recipes, you’ll never go far wrong learning the most basic recipes for your favourite styles. You can always save making the smokey vanilla mochaccino oatmeal stout for later.
I’ve used the BIAB method to brew this, but it will work equally well with conventional brewing techniques.
